1. Ingredients Required To Make Aloo Paratha

To make Aloo Paratha, you will need the following ingredients:

For the dough:

  • 2 cups whole wheat flour
  • ½ teaspoon ajwain (carom seeds)
  • ½ teaspoon salt
  • Water for kneading
  • 1 tablespoon oil

For the potato stuffing:

  • 3-4 medium potatoes (around 400-450 grams)
  • 1 green chili, finely chopped
  • 1/2 teaspoon cumin powder
  • 3/4 teaspoon amchur (dry mango powder)
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon ajwain
  • 1/4 teaspoon Kashmiri red chili powder
  • 1/2 teaspoon salt or adjust to taste
  • 2 tablespoons chopped cilantro

These ingredients will make approximately 4-5 Parathas. You can adjust the quantity of the ingredients based on your requirement. As you did with the edible leaves.

2. Steps To Make Aloo Paratha

Now, let’s make this recipe follow the below steps: 

  1. First up, we have the dough. It’s pretty straightforward. Grab a mixing bowl and toss in some whole wheat flour, salt, oil, and water. Mix it up and add more water if needed to get a soft, non-sticky dough. 
  1. Knead that dough well until it’s super soft and pliable. You should be able to press it down and see a dent, that’s how soft it needs to be. Cover the dough and let it rest for at least 30 minutes while we prep the filling.
  1. For the potato stuffing, boil or grate some potatoes. I prefer mashing them for a smoother texture. Then, add chopped green chilies, cilantro, spices, and salt. Mix everything together until well combined. Mmm, can you smell that aroma already?
  1. Now, it’s time to assemble these babies. Take a small portion of the dough and roll it into a disc. Scoop some of that delicious potato stuffing into the center. Seal the edges, enclosing the filling, and gently flatten it. Dust it with flour and roll it out into a perfect paratha.
  1. Heat up a griddle or tawa on medium-high heat. Place your paratha on it and watch for bubbles to form on the surface. Flip it over and cook the other side. Use a spatula to gently press down, helping it puff up. Drizzle some ghee or oil over the paratha and let it cook until you see those beautiful golden-brown spots.
