What is a “Lava Idli” and should you try it?
The love for food is the best-reciprocated love of the universe. A wide range of mouth-smacking flavours and spices will churn your desire to taste them. Idli Sambar is one of the most loved south Indian dishes. We all enjoy it as its tastes delectable.
Everyone loves dipping soft idlis into simmering bowls of sambar. But imagine the sambar coming out of the idlis when you cut it open. Sounds yummy, right? An Instagrammer, thecrazyindianfoodie, tried lava idli, where she revamped the traditional idli sambar and the result will leave you drooling!
Idlis are prepared from steaming fermented lentils and rice. To cook lava idli, take some silicone moulds or regular steel vatis. Grease them with some oil before using them. The first step is to make the batter for idli and add some fruit salt to it. To make the soft and fluffy idlis, add a pinch of eno and mix it well.
Put some sambar in golgappas and insert them into the moulds. Next is to add batter into the moulds over golgappas. Then coat the golgappas with the batter and completely cover it. The next step is to place it in a hot steamer and steam for around 8-10 minutes. Demould it once cooked and top it with podi and ghee.
The lava idli is delicious, and one does not need any chutney with it. When you break the idli to have it, sambar comes out of it and is lip-smacking.

Few people appreciate the fusion concept of idli sambar, but many are against the concept and asking her to keep the authentic dish as it is. “Idli ke upar atyachaar”, a person commented. “Creative but idli should be just idli”, commented another. “Superb..
